How to use up leftover rocket

• Punchy pesto
  In a mini or large food processor, put however much rocket you have leftover (about 4 handfuls is good but less will work, too), a handful of basil leaves (adjust the quantities as necessary- use more if you don’t have that much rocket left), 60g grated parmesan and a handful of toasted pine nuts. Season well, then whizz to a smooth paste, adding 100ml olive oil as you go.
• Pasta with aroma
  Toss rocket leaves through warm pasta with a fresh tomato sauce. The rocket will wilt in the heat and add some green to the final dish.
• Zesty side
  Roughly chop plenty of rocket with spinach and chard, then wilt briefly in a hot pan with olive oil, chilli flakes, lemon juice and salt and pepper. Serve alongside meat or fish.
