When we talked about storing provisions last month, we touched briefly upon the different methods of preserving foods. Mostly, however, we discussed the conditions for freezing goods. While this may be one of the most popular food preservation methods, an important part of onboard catering management is knowing various ways to keep food fresh as long as possible. Here are a few practical techniques for slowing down or killing bacteria in food.

Freezing

Simply explained: The colder the food, the less bacterial action. Although refrigeration only slows enzymes down, this method does not change taste or texture. Freezing typically does not either, with the exception of some fruits and vegetables. For long periods of time, freezing works best so long as the food has been wrapped tightly and stored in an uncrowded, regulated environment.

Drying

By exposing food to incredibly warm air — either in the oven, electric dehydrator, or under the sun — the moisture microorganisms need to flourish dries up, killing or disabling all present bacteria. Drying herbs and spices is perhaps one of the most common uses of dehydration because meats and vegetables change drastically through this process. In saying this, the result is often something new and flavourful, perfect for a variety of meals. For optimum longevity, store dried foods in air-tight packing or jars.

Boiling

Boiling food eliminates bacteria altogether. By quickly sealing boiled foods in jars or cans, caterers create a sterile environment where food stays unaffected by outside bacteria. In many cases, submerging food in a strong concentrates like alcohol, acid, or salt and sugar solutions will increase the shelf-life of jarred and canned provisions.

Pickling and Salting

Pickling no longer applies as much to fruits and meats, though it is still a great solution to soak vegetables in. Using salt and acid (i.e. vinegar), caterers may stop food from spoiling for years. Without the acid, however, there are still ways to preserve meat with only salt. Essentially, salt leeches moisture from food, producing the same effect as dehydration after long periods of time. In cold environments, heavily salted food may last for years.

Other Methods of Preservation

The following alternatives may not always make sense at sea due to complexity or lack of equipment. Many vessels, however, may have the means to preserve through pasteurization, fermentation, irradiation, carbonation, or chemical preservation, or by cheesing making, canning, freezing drying, or heat processing.

For most aforesaid methods, no more than ordinary kitchen equipment is needed: Pots, pans, jars, ovens, freezers, pantries, and so on. For more complicated techniques, however, caterers may wish to purchase special appliances like dehydrators, food processors, as well as pressure and vacuum sealers.
