A lot of them can also simply be purchased from merchants scattered across the Lands Between. Having at least a few of them in the inventory can make a huge difference, and the ones sold by Kale at the Church of Elleh should really be considered essential in the early stages of Elden Ring.
At the Church of Elleh - one of the first areas you should come across after you emerge from the crypt - you'll meet your first vendor: Merchant Kale. After speaking to him, he's going to recommend you purchase a Crafting Kit. This is good advice, so you should buy it from him as soon as you can.
Merchant Kalé is a Merchant and NPC in Elden Ring. Merchant Kalé can be found in Limgrave: Church of Elleh, soon after emerging from the Stranded Graveyard at the start of the game, you'll see a building to the North which is the Church of Elleh.

You can either choose to let him out or keep him in the evergaol; he will escape on his own if you don't let him out, so the choice is ultimately meaningless. After this, you'll need to finish Ranni's questline before you can finish Blaidd's.

To put things simply, there is no apparent negative consequence for killing the game's merchants. In fact, there is a very compelling reason to slay them, and that is that each one drops a Bell Bearing when dispatched.
In order to get unlimited Smithing Stones, you need to find and get the Smithing Stone Bell Bearings. You can give these to the twins in the Roundtable Hold. Once you do that you can buy as many Smithing Stones as you want as long as you have the runes to pay for them.

The Smithing Stones found on the walls of these caves will not respawn, but those dropped by the enemies within are unlimited. This means you can farm Smithing Stones in Elden Ring. Since enemies that drop Smithing Stones can respawn, you can farm them if you know where to go.
Smithing Stone 1 can be bought in limited quantities from some early merchants, and in unlimited quantities from the Blind Maiden Husk once you have the Smithing-Stone Miner's Bell Bearing 1 - for 200 Runes per stone.
