How do you get the shrine behind Hyrule Castle?
To enter, go to the library, look at one of the bookshelves while Magnesis is active, then remove the fake bookshelf and make your way down. You will find an unlit large torch surrounded by smaller torches. Light the large torch to unlock the Shrine.
Where to find Saas Ko'sah. This is the only Shrine located within Hyrule Castle, which is located within the game's Central region. It's specifically found in the Castle's Docks.

I thought that at the very least, Hyrule Castle would become less of an instant deathtrap and more of a fun place to actually explore, with the number of Guardians reduced and the Calamity goop gone, but no, nothing changes because there is no actual continue after you beat Ganon.
All of the above is technically optional - you can just head straight to Hyrule Castle straight from the Great Plateau and fight Ganon if you wish - but things will be much more difficult.
Windblight Ganon
If Link has at least 13 Hearts, go to the Lost Woods and obtain the Master Sword. Link's first opponent in the Sanctum is Windblight Ganon.

Location: Kihiro Moh Shrine is located in at the end of the Yiga Clan Hideout hidden in the valley of the Gerudo Highlands, near the giant pit - but you must complete a trial to reveal it.

There are several DLC Shrines in BotW that were not available previously in the base game. These shrines span areas such as the Great Plateau, Lanayru, Eldin, Hebra, and Gerudo regions - and finding them can only be done by solving clues given by Kass on the course of the DLC's quest.
Can you permanently unlock shrine bonuses?
Shrines are one thing that can boost your strength. In three categories with nine options total, shrines let you gain one upgrade per shrine permanently for a run, until you fail without completing the level. If you choose wisely, it can greatly make a difference to your chances of outliving your opponents.
Also on the subject of Shrines: your progress is saved, even if you leave. If you're feeling stumped on a particular puzzle, it is often a good idea to step away and try something else, then come back later with fresh eyes.
Open your map, and trace a line in your mind from the four distance Shrines, and they'll connect over the Temple of Time, just off center of the Great Plateau.
The Secret Shrine is a location in Majora's Mask. It is situated in the region of Ikana. More specifically, it is located within the southwest section of Ikana Canyon. In the canyon itself, the Shrine is found behind the waterfall that runs through the river.
You need to be observant and resourceful if you want to find all 120 shrines. One thing that's worth noting is that you can uncover some of the shrines that are attached to shrine quests without actually activating the quest.

Lynels are centaur-like monsters and the toughest enemies that Link can come across while roaming around Hyrule. Like other monsters, there are different colors of Lynels that represent different difficulty levels. Although all Lynels are hard to deal with, the Golden Lynels are the toughest.
Can you do all 120 shrines before divine beasts?
Like anything else in Breath of the Wild, you can tackle the divine beasts at your leisure, visiting them in any order you want at any time you want. If you want to finish all 120 shrines and get the Master Sword before cleansing a single divine beast, nobody is stopping you.
By approaching each trial's respective pedestal, you'll trigger a quest where you observe three obelisks that point the way to special challenges scattered across the world that unlock the shrines. Completing an individual challenge will unlock a single new shrine.

Are there enough shrines to get full hearts and stamina?
No, there aren't. By doing all 120 shrines, plus the four Divine Beasts you will be 3 upgrades short (heart and/or stamina). If you have the DLC you can do one more upgrade to either your hearts or stamina, leaving you 2 upgrades short.
The Lost Pilgrimage shrine quest (Daag Chokah shrine) is in The Lost Woods (which is in north central Hyrule). The quickest way to get there is to warp to the Keo Ruug shrine, right in the heart of The Lost Woods.
The Namika Ozz Shrine is on the eastern edge of the Central Hyrule region, and south west of Eldin / Death Mountain and north west of the Lanayru Wetlands. Specifically, the Shrine is in Crenel Hills on the map, more or less directly east of Hyrule Castle before hitting these two more easterly regions.
The Sheikah Sensor targets Shrines and bleeps when Link is close to one, louder and more frequently as he moves closer; and the opposite as he moves further away.
