Is gouache hard to paint with?
The gouache medium is arguably one of the easiest to learn. It's easy to clean up and set up, to clean simply wash away paint with water. You also don't need many supplies to get started, a few primary colours, a palette or something to mix on, some watercolour paper, a brush and you will be all set.
Gouache is watercolor paint. It's simply opaque watercolor, as opposed to transparent watercolor. Use would be similar, but you are dealing with more solid color, so layering is a bit more challenging since you are re-wetting the paint, so you're likely to remove or mix colors when layering.
Con: Gouache isn't ideal for bright subject matter
Because gouache requires the inclusion of white paint to mix colours, it can be a challenge to maintain the vibrancy of extremely light colours. It's easy to create a soft pastel, but a neon is going to seem impossible.

An easy way to tell if gouache or acrylics have gone bad is to smell them. They often develop a sour, mildew stench when they're past their prime. They may still be useable, but you can tell they're on their way out when they start to smell sour and off. Shelf life: 2-5 years, until they start to smell sour or dry.
What is the easiest medium for painting?
Acrylic is typically the easiest for beginners, while watercolor is the hardest. However, if you hate working with acrylic, don't force yourself to paint it just because it's easier. It's far more important to find a medium that you enjoy.
Vincent van Gogh is known for his oil paintings, but he also created some works with gouache.
Before they swtiched to gouache for their backgrounds with Bambi in 1942, Disney used gorgeous watercolors backgrounds for their movies and shorts including Snow White, Pinocchio, and Dumbo. Chris Sanders also specifically revived the watercolor look for Lilo and Stitch in 2002.
“Gouache paper” doesn't exist, so you have two options when it comes to paper. You can use a watercolor paper, or a mixed media paper. By using either, you can ensure your paper doesn't wave when applying lots of water with your gouache.
If insufficient water is used to dilute the colour, the thicker film may crack as the paint dries on the paper (note that the amount of water needed will differ with each colour). If you are painting in layers, the later ones may show cracking if the under layer absorbs binder from the wet colour.
After the first layer of gouache has dried, you can erase any mistake by taking a clean brush and wetting the paper. Use a clean brush with clear water and gently rub the paint with the damp brush. This will reactivate the gouache and let you lift the color on your brush.
Varnishing a gouache painting should be avoided, because the varnish drastically affects the depth, darkness and finish of the work. And should anyone want to retouch the painting again at some point in the future, perhaps for restoration purposes, the varnish will not come off.

Gouache is not completely opaque.
Because gouache is water-based, you will always see a bit of the colors underneath. It's best to apply light colors first, and layer dark colors on top. You'll never be able to apply a pastel shade on a dark background without a “murky” effect.
Use a combination of a sealable palette, a Sta-Wet palette sponge & paper. This keeps the paint moist for days. Just be careful not to keep it sealed too long, it may develop mold after a couple weeks. This technique worked great for me when I took my gouache out for plein air painting, as well as in the studio!

Lightly sketch your composition in pencil first, and then paint over it. Because gouache is opaque, you won't see your pencil strokes as long as they are light.

Compared to watercolors, gouache has larger particles of pigment, and its particles are packed more tightly together. Large, tightly packed particles leave less space for light to slip through, and that's what makes gouache opaque.

Do you mix water with gouache?

If the canvas is already primed, you can apply gouache paint to it directly, and it will adhere well. You can use one or two layers of gesso if the canvas is not primed. Good quality priming is critical; if it's not done right, your painting won't stick and could be damaged later.
With gesso-primed canvases, the gouache paint will easily adhere to the surface; just remember to avoid painting in high humidity or over-stretching the canvas since although gouache is more robust than watercolour paints, it is of course still less so than oil paints.
The difference between gouache and gesso is that gesso, once dry, can be worked over, whereas gouache remains forever soluble so, once dry, it has to be left as is. For that reason, it's best to add gouache at the end of the painting, while gesso can be added at any time during your process.
