Does Hyrule Castle change after defeating Ganon?
I thought that at the very least, Hyrule Castle would become less of an instant deathtrap and more of a fun place to actually explore, with the number of Guardians reduced and the Calamity goop gone, but no, nothing changes because there is no actual continue after you beat Ganon.

Make sure to go through Hyrule Castle after beating Ganon. The castle holds some pretty epic items including the Hylian Shield. There's some tough enemies to fight, but it's well worth it.
When you finish the game your save profile will display a star to show that you've defeated Ganon. When you load into the game again it will load back into a state where he is alive - this is intentional. The allows you to play the fight again using different weapons and fighting styles.

Fireblight Ganon is one of the most straightforward bosses in Breath of the Wild. In the first phase, the player can either dodge attacks to get an opening or utilize Ice Arrows. Fireblight Ganon moves around slowly, and isn't aggressive, so players can fight patiently.

Going in from the back (or the north) means you get a way to warp into Hyrule Castle after you find Saas Ko'sah shrine. If you ever want to leave and come back, this is the easiest way.
Can you continue your save after defeating Ganon?
So basically there is no game 'after ganon is defeated'. So after the credits roll and you reload your save you will be before the fight. Run back out of the castle and continue to roam.
The short answer is yes.
Unlike other weapons in the game, the Master Sword cannot break as it only needs time to replenish its energy. When the Master Sword is brought into Hyrule Castle its power will double from 30 to 60. In addition, it will last for way longer than it normally does outside.
Destroying the eyeballs will remove the immediately surrounding Malice. These eyeballs can be destroyed by using melee weapons, arrows, or remote bombs. However, the eyes can only be killed when they are open. These eyes cannot be added to the Hyrule Compendium.
