When you are starting to decorate cakes with detail, such as using gumpaste, making sugar flowers, applying surface texture to fondant like bas relief or putting sugar models together - you will need something that will hold it all firmly in place. Water will work, but the secret to getting things to hold with great staying power is - ‘Edible Glue!’

Edible glue doesn’t have any taste, doesn’t look like much, but its ability to hold all your edible creations together, is the reason it becomes your best friend and one of the most used items in your cake decorating kit!

Top Tips for Using Edible Glue

1. Less is best!

Somewhere in our phyche, we are wired to to think that if you add lots of something, it will work better! Most definitely not in this case! Plastering on to much edible glue onto fondant or gumpaste will result in a sticky mess, it will begin to dissolve and cause the fondant or gumpaste to weaken or worse tear.

The best way to use it, is to brush on a small amount, you can always add more if it is not enough, but it is harder to rectify if you brush on to much to start with.


2. Only one side needs to be brushed with glue

When attaching things together, only one side needs to be brushed with glue. So whether it is attaching fondant to fondant, gumpaste to gumpaste or gumpaste to fondant, only brush one of the sides that will be stuck down. Brush with edible glue, wait a few seconds and allow it to go slightly tacky, before bringing the 2 pieces together. It is great for adding fondant stripes, appliqués, bows and other fine detail.

3. Use edible glue for gumpaste flowers

When making gumpaste flowers, again use sparingly - dipping the end or brushing edible glue onto paper covered wire, brush off any excess glue then insert into freshly rolled and shaped gumpaste petal/leaf. Allowing the glue and petal/leaf to dry completely before using it. If this process is not followed, the gumpaste generally ends up slipping down or off the wire.

For fantasy gumpaste flowers you can use a small dab of edible glue when attaching dragees to the centre of flowers or sugar pearls to a cake.
