This page explains all of the differences in Undertale's Switch version.
Undertale came to Nintendo Switch in 2018, and includes most of the physical and digital New Content in PS4 as well as some extras in its release.
The collector's edition for Undertale's Switch version was available exclusively through Fangamer for $69 USD containing a heart-shaped music box locket, story booklet, soundtrack, sheet music book, collectors box and a copy of the game.

Overall the story for Undertale remains the same allowing you to still able to complete all different playthroughs and achieve different endings. Save file tricks the game plays such as remembering previous choices are also still intact. Most of the differences are very similar to the New Content in PS4 release with a few extras.
Crashes
A major difference is where the game would usually crash to add emphasis to the story instead the game will act a fake crash, showing the screen going blank for a second and appearing to reboot, rather than going to the Switch's menu.
The Dog Shrine
The Dog shrine is a special area added specifically to the PlayStation version of the game. It has been changed drastically for the Switch release due to the addition of the Mad Mew Mew boss fight.
Mad Mew Mew
Now going to The Dog Shrine will let you encounter Mad Mew Mew. She appears as an anime cat girl doll in the back room and talking to her will start a battle.
Choose to 'Act' and 'Touch' her three times and she'll challenge you to a battle.

She will split your soul and you will need to move both sides to the relevant colours to dodge her attacks.
During the battle she will reveal where she came from and how she came to inhabit this body.
Your attacks will do nothing so you'll need to keep dodging until you can eventually talk to Mad Mew Mew about other ways to help her fuse to this new body. You can then spare her to show her love and she will float away.
