There are many types of edible glue that can be used in cake decorating. Royal icing, piping gel and melted chocolate all work well.

To attach small to medium decorations to a cake or when making cake toppers, a mix of water and tylose/CMC powder works wonderfully. It’s much stronger than water alone and stores well in the fridge.

To make the edible sugar glue, you will need:

1/4 teaspoon Tylose/CMC powder

50mL cooled, boiled water


1. Add the Tylose/CMC powder and the cooled, boiled water to a small bowl.

2. Mix them together with a fork to dissolve and break up some of the clumps.

3. The clumps will take a while to dissolve completely, so cover the bowl and pop it in the fridge for a few hours.

4. Once set, the glue will become a thick, clear gel with a syrup-like consistency.

5. If you need to thicken the glue, you can add a little more Tylose/CMC powder.If the glue is too thick, add a little more cooled boiled water.

6. I like to decant the sugar glue into a sterilised glass bottle and store it in the fridge for about a week.

Tips!

Keep in mind when using sugar glue (or even just plain old water), less is definitely more. You don’t want sugar glue spilling over the sides of your decorations or want the fondant so wet that the decorations/pieces slide right off! Just use a little dab with a paintbrush and hold the piece in place for a few minutes while it dries.

If you’re finding that the edible sugar glue isn’t strong enough to hold your decorations, particularly if the piece is large or heavy, I would suggest using a firm royal icing mixture instead. When royal icing sets hard, it’s not going anywhere!
