Planting, Growing, and Harvesting Chive Plants
Chives are perennial members of the onion family that sport beautiful edible flowers. Plus, they’re a wonderful companion plant that helps deter pests. Here’s how to grow chives inyourgarden!
About Chives: What areChives?
Chives are cool-season, cold-tolerant perennials best planted in early to mid-spring for an early summerharvest.
Be mindful when planting this herb, as it will take over your garden if the flowers are allowed to develop fully (the flowers scatter the seeds). However, this plant is easy to dig up and moveif it does end up invading other parts ofyourgarden.
Chives are also a wonderful companion plant that deters pests. They’re a good friend to plant with carrots, celery, lettuce, peas, andtomatoes.
Types of Chives toGrow
The two species of chives commonly grown in home gardens are common chives (Allium schoenoprasum) and garlic chives (A. tuberosum):
- Common chives consist of clumps of small, slender bulbs that producethin, tubular, blue-green leaves reaching 10-15 inches in height. The edible, flavorful flowers may be white, pink, purple, or red, depending on the variety. They can be grown in zones 3 to9.
- Garlic chives(also called Chinese chives) look similar to common chives, but their leaves areflatter, greener, and get to beabout 20 inches in height. As their name suggests, their leaveshave a mild garlic flavor (bulbs are more intense). Flowers are white, and are larger and less densely-clusteredthan those of common chives. Garlic chives are not quite as cold-hardy as common chives, so they are recommended for zones 4 to9.

Planting
Chives grow best in full sun, though they will tolerate light shade. Ideally, the soil should be moist, fertile, and well-draining.Before planting, incorporate 4 to6 inches of well-composted organic matter. Work compostinto the soil to a depth of6 to8 inches. When to PlantChives
- Chives are considered a cool-season crop, meaning they grow best in the spring and fall. The harsher temperatures of summer usually causethem to go dormant until cool weather arrivesagain.
- For a head start in colder regions, start chiveseeds indoors 6 to 8 weeks before the last spring frost. (See local frost dates.)Transplants need good growth before being set in thegarden.
- Outdoors, sow seeds as soon as the soil is workable in the spring. They can take a few weeks to germinate, so don’t panic!For the best germination and growth, the temperature of the soil should be between 60º and 70ºF (15º and21ºC).
- Plant transplants outdoors once the threat of frost haspassed.
How to PlantChives
- Sow seeds about 2inches apart and no more than ¼ inch deep. Cover with a thin layer ofsoil.
- Once seedlings emerge, thin them so that plants are spaced between 4 to6 inches apart in alldirections.
Growing
How to GrowChives
- Minimal care is needed for fully grown, establishedplants.
- Although chives are drought tolerant, it’s important to give them consistent wateringthroughout the growing season for high yields. Moisten the soil thoroughly whenwatering.
- Chives’ small bulbs grow near the soil surface, souse mulch to conserve moisture and keep the weedsdown.
- For good production, top-dress with a nitrogen-heavy fertilizer in late spring or early summer if your soil is not alreadynutrient-rich.
- After the flowers bloom, remove them so that the seeds aren’t spread throughout yourgarden.
- Remember to divide the plants every 3 to 4 years in the spring. Chives are much more productive if divided regularly. Divide them into clumps of at least 10 small bulbs and allow divided plants to grow for several weeks beforeharvesting.

How to HarvestChives
- Begin harvesting chive leavesabout 30 days after you transplant or 60 days afterseeding.
- Be sure to cut the leaves down to the base when harvesting (within 1 to2 inches of thesoil).
- Harvest 3 to4 times during the first year. Insubsequent years, cut plants backmonthly.
- The chive plant will flower in late spring or early summer. The flowersare edible and taste best just after they have opened—they should look full andbright.
How to StoreChives
- Use chives when they’re fresh or frozen (freeze the leaves in an airtight bag). Dried chives lose theirflavor.
- Store chives in a cool place in a resealablecontainer.

I pick the blossoms at their peak and put them in a jar with vinegar. It makes a wonderful flavored vinegar and looks beautiful. I give them as gifts.

Can I grow chives on a hill where the soil is dry and not deep. What do I need to insure the seeds do well. Do I need to add any fertilizer when planting

I'm new to vegetable gardening and I didn't know there was so much to learn but good because I won't be bored. I've been trying for weeks to find the best time to sow garlic chives in lower Michigan zone 6. I'm going to start keeping track of the dates I do things and such so I'll find it easier next year.

How do I harvest the chive seeds? I have flowers but don't see any seeds and my flowers are about two weeks old.

I thought the same thing (that there were no seeds). Go over a paper or something and pick the dried flowers apart. The seeds look like very thin slivers and are tiny.
