It can be frustrating to try a new recipe and not understand how much of an ingredient to purchase at the store. Sometimes they give you a quantity of parsley in volume (1/4 cup), sometimes as a weight (2 ounce) and still others the parsley is given as a produce description (1 medium bunch). But what are they really talking about? How much is in a parsley bunch? In order to help make cooking easier we did some experiments to help tell you exactly how many bunches you need to buy.

There are 2 types of parsley: Italian (flat leaf) and curly. Flat Italian parsley has a robust taste that's more ideal for flavoring; the curly leaf variety is less flavorful and is mostly used as a garnish. A bunch of Italian (flat-leaf) parsley has more sprigs and weighs more than a bunch of curly parsley. However when chopped, the curly parsley yields almost twice as much as the Italian parsley. While both parsleys have their own unique flavor, most recipes that call for "parsley" are referring to Italian. However, you can use either type, just make the necessary quantity adjustments.

To answer How many parsley bunches in a cup we went to the grocery store to check out the produce section. After surveying the herb selection we realized that 1 average size bunch of flat Italian parsley weighs about 2 ounces and contains about 48 sprigs.

We decided to use a 2 ounce medium bunch of flat Italian parsley for our how many parsley bunches in a cup testing sample. We then started chopping and found the leaves from 2 parsley sprigs yielded 1 tablespoon. In order to reach the 1 cup mark, you would need to chop a little more than 3/4 of a bunch of parsley. For 1 cup of loosely packed leaves you would need to de-leaf about 1/4 of a bunch.

How to Store Parsley Bunch

Basically, there are two main types of parsley - curly and flat leafed.

Curly parsley has a fresh, crispy taste and adds texture and color when added just before serving. This is the parsley that is the essential ingredient in the classic flavoring. Flat leafed or Italian parsley has a more delicate flat leaf pattern which does not hold up as well for garnishing. With its stronger flavor, it is more frequently used in cooking.

Short Term Parsley Storage

Snip off the bottom of the unwashed parsley stems. Fill a jar or a water glass partially with water; place the stem ends of the herbs into the water in the container. Loosely cover the jar of parsley with a plastic bag and store either in the refrigerator or at room temperature. Change the water after several days if the water starts to discolor. Fresh parsley can last up to 2 weeks or longer when stored this way.

Curly parsley holds its shape well under refrigeration; it can also be wrapped in a damp towel and placed in a plastic bag.

Parsley Long Term Storage

To freeze: remove the leaves and discard the parsley stems. Fill every ice cube cavity of an ice cube tray with the parsley leafs, then completely top off with water. Place in the freezer for 2 days; remove the parsley cubes and transfer them into a freezer Ziploc bag. Store the Ziploc bag in the freezer for 2 months and use as needed.
