Drinking Milk in India - Rajasthan Forum (2024)

Dear Stamps,

I will give you a different advice. Tetrapacked and UHT milk is something you drink everyday in U.S. Nothing new or romantic in it.

Visit a local sweetmeat shops where you will find a big iron cauldron full of boiling milk. They keep it boiling on slow flame throughout the day. So by late evening it becomes slightly thick due to evaporation of water contents, turns its color to slightly off white and that makes it very tasty too. Since it is hot, no infection.

When you ask for it, they would pour it in a glass, add little cream on top of it and some of them add a pinch of dry fruits crushed or cardamom seeds crushed to add flavour. This is real Indian flavour. Just try it I am sure you will love it Even if nothing is added, it tastes great.

If the milk is quite thick then they add sugar and dry fruits in it. it is called "Rabdi" and can be an excellent dessert after lunch or dinner.

When Milk is boiled so much that it ultimately turns into a solid form that is called "Khoya" or "Mawa" and lots of Indian sweets are made of that like "Pedha" "Barfi" etc. you must try these variations and derivatives as a ardent milk lover.

One last tip : Thick boiling milk is cooled and added sugar and dryfruits etc. and freezed in small moulds. It is called "Kulfi", an Indian style pure milk ice cream which you will never get anywhere in the world. It is simply unbeatable.

One caution : go only to prestigious and reputed shops in the area. Your hotel info desk may help you in choosing right shop and right area.
