Fortunately I can put your mind at rest here, as the calcium in milk is
actually very stable and unaffected by heating or processing. Neither do
levels deteriorate when you leave milk open in the fridge.
So you can carry
on enjoying your porridge without any worries. As well as being a good
source of calcium it's a great source of soluble fibre - which helps to lower
cholesterol - and slow releasing carbohydrates - which keep up your energy
levels for longer.
The only nutrient in milk that can be readily leached away is riboflavin
(vitamin B2) which is required for cells to produce energy.
This nutrient is
lost through light exposure so if you have milk delivered from the milkman,
don't let it stand on the step where sunlight can affect it.
