Dropped Cookie

This is the easiest kind of cookie to make and the common one to make for the first experience. Dropped Cookie are made by dropping a teaspoon of cookie dough onto a cookie sheet. You need to give space between cookie dough because the cookie dough will be spreading while baked. Dropped Cookie examples are Chocolate Chip Cookieand Oatmeal Cookie.

Molded Cookie

Molded Cookie usually molded into balls or wreaths before baking. The dough itself is stiffer than the dropped cookie. You need to mold it by yourself and keep your fingers or utensils lightly dusted with flour to keep the dough from sticking. The examples of molded cookie are Peanut Butter Cookie, Almond Crescent, and Biscotti.

Rolled Cookie/Cutout Cookie

Rolled Cookie dough usually is stiffer and needs to be chilled first before you use it. After the dough is chilled, roll out and cut into shapes with a cookie cutter or with a knife. This kind of cookie is really fun to eat because of the unlimited variety of shapes. The Rolled Cookie example is Gingerbread.

Pressed Cookie

Pressed Cookie dough should be soft but firm enough to hold the cookie’s shape. If your dough is too soft, put it in the refrigerator to make it stiffer. If the dough is too stiff, add an egg yolk to make it softer. You should have the perfect dough to make this. Then you put your dough into a cookie press (cookie gun) or pastry tube into various decorative shapes. Pressed Cookie example is Spritz Cookie.

Bar Cookie

Bar Cookie examples are Brownies and Lemon Bars. It is more like a cake and a softer type of cookie. Bar Cookie can be crisp or chewy and it may also be layered or filled. The size of the pan is really important in this type of cookie! After you baked it, cool it first then cut it into squares for one bite or two bites.

Sandwich Cookie

It can be rolled or pressed cookie for the dough and assembled as a sandwich for the final product. For the filling usually a sweet one, such as frosting, ganache, jam, marshmallow creme, and peanut buttercream. It can be a soft cookie with a filling or even a crisp cookie with filling too! Examples of Sandwich Cookie is French Macaroons.

No-Bake Cookie

It is a “faux” cookie! You don’t need an oven to bake this type of cookie. Usually, this type of cookie uses candy bars or ready-made cookies. It’s a candy-cookie hybrid! Examples of No-Bake Cookie are Rice Krispies Treat, Chocolate Peanut Butter Bars, Rum Balls, and many more.
